1 medium red cabbage, sliced
1 lb cooking apples, peeled and sliced
1 lb onions, sliced
2 cloves garlic, chopped or crushed
zest & juice of 1 orange
salt & pepper
1/4 pint red wine
1/4 pint wine vinegar
- Layer cabbage, apples and onions in a casserole dish until all are used, placing cloves in the middle.
- Mix garlic, orange juice & zest, seasoning, wine and vinegar in a jug and pour over the cabbage mixture.
- Cover and cook at Gas Mark 3, 160 C, 325 F, for 2 hours.
