Ingredients: Almond Biscuits : Glutenfree

Ingredients:makes 48 small biscuits

4 oz or 100g sugar

4 oz / 100g butter

4 oz / 100g ground almonds

4 oz / 100g

gluten-free flour mix

1 egg

2 oz / 50g chopped almonds

Instructions: Almond Biscuits : Glutenfree

Instructions:

Cream the butter and sugar together, then work in the ground almondsand flour.

Separate the egg yolk and white and keep a little of the white.

Beat the rest of the egg and add a little at a time to the mixture,working it in until a firm dough is produced.

Roll out 1/8th inch thick or 3mm and cut into rounds or shapes.

Brush the dough with white of egg and decorate with chopped almonds.

Cooking:

Preheated oven

gas mark 4 350°F 180°C

Cook for 10 to 12 minutes or until they are golden brown.

Cool on a wire tray and store in an airtight tin.
