All beans must be properly cooked before being used to make salads. Beans with thick skins should have these skins removed. All beans can be used for salads in this way. Try mixtures of different beans.
The cooked beans should be tossed in a dressing and then left to marinade for an hour before serving cold.
The simplest dressing is of olive oil and lemon or lime juice, but any starch free dressing can be used to give a wide variety of bean salads.
