130.Apricot and Sesame Slice : Glutenfree

Ingredients: makes 1 lb

2 oz / 50g butter or margarine

2 oz / 50g golden syrup

2 oz / 50g demerara sugar

2 oz / 50g shredded coconut

4 oz / 100g flake rice

2 oz / 50g chopped dried apricots

1 oz / 25g untoasted sesame seeds

2 oz / 50g plain chocolate (not cooking chocolate)

½ teaspoon ground cinnamon

salt to taste


Line a shallow 11" x 8" / 28cm x 20cm tin with foil.

Melt the butter and syrup together over a low heat.

Chill the chocolate and then crush the chocolate into chips.

Mix all the other ingredients together and then mix in the butter and syrup.

Mix the chocolate chips in last.

Spread the mixture over the foil in the tin and press down well.


Preheated oven

gas mark 2 300°F 150°C

Bake for 30 - 35 minutes.

When cold, cut into fingers and turn out of the tin.
