174.Garlic Butter : Glutenfree

4 oz / 100g butter

2 garlic cloves

salt to taste

½ oz / 10g chives


Warm the butter slightly and then beat into a cream.

Use a pestle and mortar to grind the garlic with the salt into a paste, and then beat into the creamed butter.

Gently mix in the chives.

Refrigerate until ready to serve.

Black Butter


4 oz / 100g butter

1 tbsp / 45ml chopped parsley

1 tsp / 5ml capers

1 tbsp / 45ml vinegar
