Ingredients: makes one round of shortbread
8oz / 200g gluten-free fine flour mix
3 oz / 75g granulated sugar
100 ml olive oil
Mix the dry ingredients together. Then mix in the olive oil until a fine mixture or soft dough is produced - this will depend on the what sort of mixer you are using.
Press well into a greased tray to the final thickness required forthe biscuits. It is much easier to make one large shortbread and score itbefore cooking than to make separate biscuits.
gas mark 2 300°F 150°C
Bake for 30 to 40 minutes until light brown.
Ginger shortbread: add ½ oz or 10 g powdered ginger to the dry ingredients, or add chopped preserved ginger.
Cinnamon shortbread: add ¼ oz or 5g powdered cinnamon to the dry ingredients
