Ingredients: to serve four
4 egg whites
8 oz / 200g caster sugar
1 tsp lemon juice
2 tsp cornflour
2 oz / 50g walnuts
Whisk the egg whites and the salt together until stiff.
Gradually whisk in the sugar until the mixture stands in stiff peaks.
Then sift the cornflour over the mixture and fold in together with the walnuts and lemon juice.
Line a tray with non-stick baking parchment and spread the mixture leaving a slight hollow in the centre.
gas mark 2 300°F 150°C
Ensure that your oven is not hotter than this.
Bake for 45 minutes to one hour.
Fill the pavlova with whipped cream and decorate with more walnuts and a little grated chocolate.
