163. Pease Pudding - gluten-free

Ingredients per person:

2 oz yellow split peas ( 1/2 cup or 60 grams )

1 egg yolk

1/2 oz butter

Salt and pepper to taste


Soak the split peas overnight in water, and then drain.

Cover the peas with fresh water and simmer gently for 2 hours ( add more water if needed), or cook in a pressure cooker for 20 minutes under high pressure.

The peas at this stage should be soft but not a paste. Drain the peas and place in a food processor. Add the egg yolk and butter plus salt and pepper and process into a puree.

Transfer the puree to a bowl for steaming, steam for a further 40 minutes, or place in a baking tray and bake in low heat for 40 minutes.
