23.Savoury Ducks or Faggots : Glutenfree

(Purchased savoury ducks often contain gluten.)

Ingredients: to serve four

12 oz / 340g pigs liver, well chopped

4 oz / 100g pig fat or lard

1 large well chopped onion

salt to taste

fresh ground black pepper to taste

pinch herbs, sage, thyme, basil

pinch grated nutmeg to taste

1 egg

12 oz / 325g gluten free breadcrumbs

8 rashers bacon


Place all the ingredients except for the egg, bacon and breadcrumbs in a pan. Cover with a tight fitting lid and and cook gently for half an hour.

Then pour off the fat and allow the mixture to cool slightly.

Beat the egg and stir this into the mixture.

Stir gluten free bread-crumbs into the mixture until it becomes stiff.

Form the mixture into egg sized lumps and wrap a slice of bacon round each lump and place on a baking tray.


Preheated oven

gas mark 4 350°F 180°C

Bake for 12 - 15 minutes until the bacon is cooked.
