Squash Pudding Kanom Fugtong

Ingredients:

2 cups of steamed winter squash, mashed and cooled.

1 cup rice flour

1 cup tapioca flour

3/4 cup sugar

250 ml coconut milk

salt to taste

grated fresh cocnut meat to garnish as you see.

Method:

Steam the squash and cool.

Sift the flours together with the salt, and then mix in the sugar.

Kneed the squash adding the flour mix a little at a time until smooth.

Kneed in the coconut milk.

Spoon the mixture into the little dishes.

Add the coconut garnish to the top.

Place the dishes in a steamer and steam for 25 minutes.
