40.Turkey in Stilton Sauce and Rice Noodles : Glutenfree

Ingredients: to serve two

2 oz / 50g mushroom

1 small onion

1 tblsp olive oil

4 oz / 100g cooked turkey meat

2 fl oz / 50ml single cream

2 fl oz / 50ml milk

1 oz / 25g Stilton cheese

salt to taste

2 oz / 50g rice noodles

1 oz / 25g grated cheddar cheese


Fry the chopped mushroom and onion together until soft, then add bite size pieces of cooked turkey and cover with the cream and milk.

Crumble in the Stilton cheese and bring to a gentle simmer.

If the sauce seems to thick then stir in a little more milk.

Cover the rice noodles with water in a separate pan and simmer for five minutes until soft.

Drain the rice noodles and place half in a casserole.

Pour the turkey and Stilton mixture onto the rice noodles in a casserole and then add the remaining noodles.

Sprinkle the grated cheddar cheese on top.


Preheated oven

gas mark 4 350°F 180°C

Bake for 12 - 15 minutes.
