150.Cauliflower and potato soup Recipe: Low Fat, Low Sugar

For four people

1/2 cauliflower

1 medium onion, finely chopped

2 medium potatoes diced as small as possible

1 pint / 550 ml vegetable stock

1/2 teaspoon thyme leaves

fresh ground pepper to taste

salt to taste

  • Cook the potato, onion, cauliflower and herbs and seasoning in the stock until soft.
  • Liquidise all the vegetables in the stock.
  • Serve with any bread.
