201.Italian Tomato Sauce Recipe: Low Fat, Low Sugar


1/8 pint / 75ml olive oil

1 medium onion

2 garlic cloves

2 lb / 1Kg tomato or one 14oz tin chopped tomato

1 carrot

1 celery stick

1 oz / 25g sugar

fresh ground black pepper to taste

salt to taste

  • Cook the chopped onion and garlic slowly in the oil until soft.
  • Add the other ingredients, finely chopped, and simmer gently for at least one hour until the sauce is thickening.
  • Liquidise before serving.
