121.Rice and sultana Recipe: Low Fat, Low Sugar

Per person

2 oz / 50g brown rice

2 oz / 50g sultanas

1/4 pint / 150 ml water

  • Soak the rice and sultanas in the water overnight.
  • In the morning, simmer gently for 35 - 40 minutes until the rice is tender but nutty.
  • Serve with fruit juice.

  • Precooked brown rice reduces the cooking time to 20 minutes.
  • Dates, raisins or chopped dried apricots may be used in place of the dates.
