218.Coleslaw Recipe: Low Fat, Low Sugar


Coleslaw can be based on a wide variety of raw vegetables and the quantities are not particularly important, as long as you have plenty of variety. Vary the proportion of ingredients as you require.

Serves 4

2 eating apples

6 oz / 150 g hard white cabbage

4 oz / 100 g carrot

2 oz / 50 g celery

2 oz / 50 g onion

1 oz / 25 g parsley

1 teaspoon caraway seed

1 tablespoon olive oil

1 tablespoon lemon juice

salt to taste

  • Core and dice the apples.
  • Slice the cabbage as thinly as possible.
  • Slice the celery and onion.
  • Grate the carrot.
  • Mix all the ingredients together and mix again before serving.
