162.Scotch broth Recipe: Low Fat, Low Sugar

serves 4

1 pint / 600 ml mutton stock

1 medium onion,well chopped

1 medium leek, washed well and cut into rings

2 medium carrots, thinly sliced

1 small turnip or swede, chopped

salt to taste

fresh ground black pepper to taste

  • Add all the ingredients to the stock. Bring to the boil and simmer gently for an hour.
  • Garnish with chopped parsleyServe with fresh wholemeal bread.
