240.Tangy cauliflower Recipe: Low Fat, Low Sugar

Serves 4

1 cauliflower, broken into florets

salt and pepper

4 - 5 tablespoons olive oil

1 tablespoon balsamic vinegar

zest and juice from 1 orange

1 tablespoon chopped fresh oregano

  • Simmer cauliflower in boiling seasoned water for 5 minutes. Drain.
Mix olive oil, vinegar and juice and zest of orange.
  • Add to cauliflower and toss gently.
  • Sprinkle with oregano and serve.
