Foods that are gluten-free and don't produce a rapid surge of sugar when digested.
Fresh meat, fish, eggs
Leafy vegetables and salads, use olive oil and wine vinegar as a dressing.
Raw carrot grated.
Small amounts of fresh fruit. No added sugar.

Unless there is a specific problem with milk fats or milk sugars (lactose) then ordinary butter is one of the healthiest options on gluten-free bread.

I had been ill all year with sickness & diahrear. My consultant diagnosed IBS and told me to learn to live with it. However, my GP was more helpful and diagnosed gluton and dairy intolerance. I lost approx 2 stone in weight and am having difficulty maintaing my current weight let alone putting any back on. Any ideas would be appreciated as I lack energy and fel tired all the time

To increase your energy intake:
It takes time for the damage caused by gluten to heal, and the digestive system starts absorbing food properly again.
Many people get a lot of their energy from dairy fats, cheese, spreads etc, and from cakes, biscuits and pastry. As soon as you cut these out of the diet you need to think about the energy content of your food. I add olive oil to rice or vegetables to increase the energy content, and eat larger portions of meat, potato, rice and vegetables. You also need to ensure that you get three good meals a day.
Start with a cooked breakfast and a proper meal at lunch time as well as in the evening

Thank you for your help. I realise now that I have not really changed my eating habits sufficiently and will do as you suggest. I do not have a cooked breakfast nor a proper meal at lunch time. I will start to have a cooked breakfast and a proper meal at lunchtime

Hey all, I've just been diagnosed with a gluten and dairy intolerance, and i'm just confused about a few things, at the moment(only been on the diet for a few days) i feel very bloated! im hoping this will go away, did anyone else get this when cutting things like dairy and gluten out of their diets? im trying my best to compromise and find things that i can eat and trying to eat as much fruit and veg as i can. I'm terrified of putting on weight? is this common when you cut gluten and dairy out of your diet? does anyone have any nice easy recepies? im also veggie, so my diet seems to be very limitied at the moment! is it bad to eat too much potato? if anyone could get back to me i'd be so grateful :)

You are unlikely to put on weight on a vegetarian gluten-free and dairy-free diet unless you are adding spreads or oil to your potato. The extra fat tends to come from the spreads, not from the potato.
