Gluten and sugar free baking: from on 2003-02-19

Dear Peter,
I am an Artisan baker located in the United States. I recently started my own business baking custom breads and rolls for local restaurants. In doing so I have found a great need for gluten and sugar free products. I have also found that the cost of raw materials makes this a very hard business to profit from, thus very few businesses in my area are willing to deal with this market. This gave me the idea of forming an online club that will address this. Can you please help me with any recipe for bread for my little girl of 6 years old, that's not allowed to eat gluten,sugar,dairy or fruit. She only likes soft white bread and would not eat any of the other breads I have tried as they are not soft and white. Please

Mix 4 oz of fine rice flour / sorghum/ maize flour with an egg and a tablespoon of olive oil
Add enough water to make a runny batter.

Pour small amounts into the pan and spread thinly.Cook in a hot frying pan with a little more oil.
Turn until brown each side. Serve warm.

It is not soft and white, but don't call it bread. Tell your little girl they are a special treat.

Help please!
I'm going mad trying to cut all forms of sugar out of my diet, i've been doing pretty well for the past 2 months but with Easter coming up & all that Chocolate it's going to be pretty hard, i have a really sweet tooth & have been substituting sugar for raw unheated organic honey, which of course i can not heat other wise i would be defeating the object. I wondered if you could provide a recipe for sugar free chocolate & also any deserts?!

I am sure that you can help.

We have just found out that our daughter of 13 years has a very very high glucose level.
Our nutritionist has also taken her off all gluten products.

Please, please could you email some recipes for our daughter to enjoy gluten and sugar free (kosher) food e.g. bread, cookies, salad dressing etc

Can you use gluten free rice flour for cooking in the no flour no sugar diet? Also
I can not find a list of the things you can eat or can not eat on this diet. I understand the no sugar. But I was under the impression as long as there was no gluten in the flour and no yeast, it would be o.k. Please be more specific. Teresa

Just thought i would let you know i finally found i really good white bread. I couldn't stand the other ones either but to me this one is better than regular. The name is Gluten Free Pantry's Sandwich Bread, we get it at Wild Oats. hope i helped
