hi im just writing to ask if you have a rough idea for a 3-4 tier wedding cake as my mam has glactosemia and cant have dairy products and is thinking of getting married soon we would like it to be white with red ribbons or flowers etc. Thanks xxf9gf

Often the best solution is a normal cake for the lower tiers - for the guests, and a top tier for those who cannot eat the normal cake.

I would be very careful as drinking the whiskey could be doing hidden damage. I react very badly to any alcohol made with grains. I also react to malt vinegar but not wine or cider vinegar. They are not safe for everyone

I suffered 4over25yrs w crohns colitis diverticulitis no one in the medical community discussed celiac w me. My gastro dr told me it has nothing to do w diet. I went gluten free 5 months ago and I'm a new woman. I don't need to know where the bathrooms are. I'm not bleeding anymore no more diareah it's gone. It's over!!! I think I had depression also but that lifted as well probably because now I'm normal. Finally!!! The bleeding stopped

I have a new Panasonic bread machine and it makes great wheat breads. Unfortunately I've had no luck using gluten free flour - no rising, and incomplete mixing. Do you have a good recipe using gluten free flour, one that does not use eggs?

I see that you have posted a lot of info so I wondered if you might be able to help me too. I'm supposed to be gluten free, corn free, soy free, dairy free, sugar and all sweeteners except stevia free, peanut free,yeast free, and more. I'm currently trying to make or find recipes to bake such as breads, cakes, cookies, etc. that will fit into these restrictions. Is there any chance you can lead me to some help.

Gluten free plus soy free plus dairy free is not uncommon. Corn free as well is unusual. Sugar in the diet cannot be avoided - and there are several different sorts of sugar - but you can avoid adding extra sugar.

So the first question I would ask is what is the basis of the diagnosis?

You can bake with eggs, rice flour, sorghum, gram, potato, sticky rice flour, tapioca flour, chestnut flour, sago flour, various oils - I use olive oil for baking. You could use lard.
Other useful ingredients: ground almonds, cocoa powder ( not chocolate) , coconut flour / cream.

I tend to eat very little baked food. breakfast is freshly cooked rice with fruit. Lunch rice or baked potato with vegetables, supper - main meal, meat or fish, potato, variety of vegetables.
