I'm working on a research project about how/why our appetites evolved as they did. Does anybody know of any primary literature references on this topic

Well, perhaps on a more useful note to answer your question, Danielle, I have two references that you can start with:
1. FOOD AND EVOLUTION: TOWARD A THEORY OF HUMAN FOOD HABITS. Edited by Marvin Harris and Eric B. Ross. Temple University Press. 1987.
2. CONSUMING PASSIONS: THE ANTHROPOLOGY OF EATING. By Peter Farb and George Armelagos. Houghton Mifflin Company. 1980.
Thay should give you place to start anyway!
And by the, Jason, the human anatomy is actually far better suited (evolved) to eating meat and fats. We lack the gut that allows us to process most plant material as a suitable food source
