For four people
1 medium onion, finely chopped
2 medium potatoes diced as small as possible
1 pint / 550 ml vegetable stock
1/2 teaspoon thyme leaves
fresh ground pepper to taste
salt to taste
- Cook the potato, onion, cauliflower and herbs and seasoning in the stock until soft.
- Liquidise all the vegetables in the stock.
- Serve with any bread.
