Serves 4

8 medium leeks

salt and pepper

2 oz / 50 g flaked almonds

chopped fresh herbs (basil, marjoram)

  • Wash and slice the leeks. Season and simmer in boiling water for 5 - 10 minutes until just cooked.
  • Sprinkle with flaked almonds, toast briefly under the grill, sprinkle with herbs and serve.
