2 tablespoons olive oil
1 lb new potatoes or old potatoes cut into chunks
1 teaspoon chilli powder
1 teaspoon paprika
1 teaspoon ground coriander
juice of 1 lime or lemon
1 teaspoon sugar
1 tablespoon chopped fresh basil
1 tablespoon chopped fresh coriander
- Saute the potatoes in the oil for 5 minutes until golden all over.
- Add spices, juice, sugar and salt.
- Cover and cook for 10 - 15 more minutes, until potatoes are tender.
- Sprinkle with chopped herbs, toss and serve.
