Sponge Layer Cake

Make an 8" vanilla sponge cake and an 8" chocolate sponge cake.

Sandwich the two cakes together with a layer of chocolate butter-cream icing.

Extra layers can be added for more variety.

Spread the top of the cake with white icing or butter-cream icing.

Marble Cake

Prepare the basic sponge mixture and divide this into three portions.

Flavour and colour each portion of the mixture separately.

Pour each portion into the same sponge tin and stir very briefly- twice round with the handle of a wooden spoon is enough.

Cook and ice in the usual way.

Variations:

Layer cakes can also be made using Almond sponge cake or Bataclan.
